A fast, hearty chili that scales well and tastes even better the next day.

Brown the beef in a large pot over medium heat, then drain excess fat.

Add diced onion and garlic. Cook 3–4 minutes until fragrant.

Stir in tomatoes, beans, chili powder, and a splash of water. Simmer 30 minutes.

Season to taste with salt and pepper, then serve with cheddar on top.
